I tried Jamie Oliver's pumpkin-muffins last week and didn't need the whole pumpkin.
So I decided to make one of my favorites: pumpkin cream soup - so easy and so yummy!!
What you need:
- 450 g pumkin (butternut in this case
- 1 onion
- 1/2 teaspon ginger
- oil for roasting
- 300 ml water
- 1 soup cube
- 100 ml whipping cream
- pumpkin seed oil and roasted pumpkin seeds
Wash the pumpkin, remove the seeds and cut in pieces.
Peel the onion and also cut in pieces.
Heat oil in a saucepan (M) to maximum heat and add the onion and cook for 2 minutes. Add the pumpkin-pieces and ginger to roast a little bit.
Then add the water and reduce heat, simmer till the pumpkin get's smooth.
Add the soup cube (vegetable) and then mash with the blender.
Finally add the whipping cream and heat.
Serve the soup decorated with pumpkin seed oil and roasted pumpkin seeds:
