spring herbals: WILD GARLIC


There are some other things beside flowers, fresh air and sunny weather that I love about spring - fresh vegetables and herbals from Austria!!
Regional food is the best - there's nothing to discuss ;)

I bought wild garlic lately and decided to make pesto with it - so easy and so yummy!!


 What you need for 2 servings:

50 g wild garlic
250 g Pasta
25 g pine nuts
a piece butter
salt & white wine


Boil water and cook the pasta in it. Wash the wild garlic and cut in little pieces. Roast the pine nuts in a hot pan - without butter or oil, be careful, the pine nuts shouldn't get to dark!! Pound them with a mortar. Melt butter in the hot pan, add the wild garlic. Deglaze with a splash of wine. Add the cooked wild garlic in the mortar and shred it together.


That's it: the homemade pesto is ready!

Finish: Took the past in the pan and mix with the homemade pesto - et voilà!!
