{ vanilla-raspberry-cupcakes }

Maybe someone has already seen the vanilla-raspberry-cupcakes in
my food-snapshot-post.


Now I'll show you some more pics and share the recipe with you :)
It's very simple, but you need some time for that.



Vanilla-Raspberry-Cupcakes:

What you need for 10 cupcakes:

raspberries & mint leaves
+
125 g butter
125 g fine sugar
2 eggs
1 p. vanilla sugar
125 g flour
1 1/2 tea spoons baking powder
1 table spoons milk
1 table spoon rum
+
200 g mascarpone
80 g sugar
2 table spoons orange juice
+
fresh raspberries and mint leaves
1 egg white
fine sugar


Start with the sugared berries and leaves, they should dry over night or some hours.
Whisk the egg white and brush raspberries and mint leaves carefull with it. Give them at a plate and strew with sugar. Let it dry at a sheet of baking paper.



For the dough pre-heat the oven at 180°C. Mix butter and sugar in a bowl till it's a smooth and fluffy pastry. Add the whisked eggs step by step while stirring, spoon by spoon.
After that mix in the vanilla sugar. Sift flour with the baking powder and mix it slowly into the pastry, add the milk carefully. The dough should be smooth now.
Give the dough into the muffin-pans.


After 15-20 minutes in the oven the little cakes are ready, let them cool before you decorate with the topping.

The topping is very easy, stir the mascarpone, sugar and orange juice in a bowl - ready!
With an icing bag you can decorate the cupcakes easily.

Finally decorate them with the sugared berries and mint leaves - and enjoy!!
