:: tea-time muffins ::

Some days ago I was in the mood to bake some muffins, I decided to try a new recipe:

:: chocolate - mint - muffins ::



What you need for 12 muffins:
  • 100 g chocolate-mints (like 'After Eight') + 6 for decoration
  • 100 g butter
  • 100 g cream
  • 200 g flour
  • 2 teaspoons of baking powder
  • 50 g chopped almonds
  • 2 eggs
  • 100 g sugar
  • 100 g powder sugar
  • 2 teaspoons lemon juice






Preheat the oven to 180°C and prepare 12 muffin-wrappers.
Melt chocolate-mints, butter and cream in a bowl, I did it above hot water - don't forget to stir regularly.


Mix flour, baking powder and the chopped almonds.
Now give the eggs + sugar in a big bowl, add the melted chocolate-butter-cream-mix and stir well.
At least fold the flour-almond-mix and split the pastry into the muffins-wrappers.

Bake about 20 - 25 minutes.








Decorate with sugar icing: stir powder sugar, 2 teaspoons lemon juice and water.
Cut the chocolate-mints in 12 pieces and fix them with the sugar icing.

FYI: About 280 calories per muffin ;)
